The first tomato
is mostly weather.
Warm nights, dry mornings, and the decision to leave the fruit on the vine for one more day shaped the first menu of the season.

Ripeness is a service decision.
The field tells us when the fruit will hold its acidity, when its skin will soften, and when another day would turn precision into sweetness. The menu begins with that observation.
“We pick for the plate it will become, not for the crate it must fill.”

Temperature before gesture.
The tomato rests while cultured cream is brought just above cellar temperature. Seed, oil, and salt arrive only after the plate is ready to leave the pass.
